Enchilada Casserole
I’m always looking for new recipes to make for new mamas and other reasons I deliver food to people. I found this in an old recipe book written by farmers' and ranchers' wives in Oklahoma.
I recently made this for the arrival of a new baby. I’m always nervous to try something new when delivering food. However, this dish got rave reviews and she even ask me for the recipe!!! Make it this weekend…you will be glad you did!
Ingredients:
2 lbs. hamburger meat
1 clove garlic
1 package taco seasoning mix
pinch of salt and pepper
1 dozen corn tortillas
1 cup grated cheddar cheese
1 chopped onion
1 8-oz can tomato sauce
1 can cream of chicken or mushroom soup
3/4 cup milk
Cilantro for garnish
1 lime
Directions:
Brown the hamburger meat, onion, and garlic together. Drain excess grease. Add sauce and seasoning mix to your meat. Heat well until thoroughly mixed. Line the Bottom of a 9x13 pan with 6 tortillas. Pour meat mixture over them, and then cover with the other 6 tortillas. Pour soup and milk over the top of the last tortillas and sprinkle with grated cheese. Bake at 350 degrees for 45 minutes. Top with cilantro and a splash of lime once our of the oven. Serves up to 8 hungry people.
