Carolyn's Cornbread Dressing
The holidays are the perfect time to pull out recipes old and new. Carolyn Strange shared this dressing recipe with me and I had to share it with you. I could not find a dressing that we all liked for Thanksgiving. Angie said one day that her mom's dressing was the BEST! She was right. The secret is the chicken soup with herbs. I find it at Tom Thumb, but only during the holidays.
Ingredients:
2 - boxes of Jiffy Cornbread (baked ... make sure you have ingredients for making the cornbread)
1 - Cup of Celery
1 - Cup of Onion
3 tbs butter
3 Eggs
2 cans of Chicken broth
2 cans of Chicken soup with Herbs
Pepper to taste
How to:
Make 2 boxes of Jiffy Cornbread. Crumble cornbread into a large bowl. Saute 1 cup chopped celery and 1 cup chopped onions in 3 tbs butter until tender. Combine cornbread, sauteed onions and celery, 3 beaten eggs, 2 cans chicken broth, and 2 cans of Cream of Chicken soup with Herbs. Add 1/4 tsp pepper. Mix well. Spoon into a greased baking dish (13x9). Bake 350° for 45 minutes ... will be slightly brown around the edges and the knife will come clean when put into the middle. Serve and enjoy!
